1. A $30.00 entry fee is required for each meat category entered.
(brisket, pork ribs, chicken, fajitas)
2. The chief cook will be held responsible for the conduct of the team.
No more than five cooks per team are allowed. Each team will be
responsible for the cleanup of their space.
3. Trophy will be awarded 1st place in all categories. There will be no
cash prize, since all money is going to charity.
4. One container of each category will be judged. Barbeque will be
judged on aroma, appearance, texture, taste.
5. Fires must be of wood or charcoal. No electric or gas grills.
Contestants must supply all needed equipment and supplies. Each
team will be responsible for their team members and guests.
6. Competition meats cannot be seasoned marinated or on the pit before
the official start time. No pre-cooked, pre-boiled or pre-marinated
meats. Cooking (including seasoning or marinating) will not begin
until the meat is inspected. Since we cannot set up the day before, it
may be a good idea to cook two 6 lb briskets instead of one 12 lb, or
however many your team plans on cooking.
7. Contestants may begin setting up at 4:00 A.M., Saturday July 13th.
Check in with Brickwall representative upon your team’s arrival. No
security for the pits will be provided by Brickwall Firm or the Houston
8. Contestants must provide their own tables, chairs and tents if so
desired. There will be no electricity.
9. Turn-In time 4:15 pm
10. Although it’s not required, please make enough food to hand out
samples to those who have paid general admission entry.
11. Brisket, Chicken, Pork Ribs, and Fajitas will be judged, but feel free
to make any other entrees or sides to be sampled at your booth.
12. As this contest will be on the property of The Firkin & Phoenix,
all alcoholic beverages must be purchased through the bar, or
outside drink stands.
